Pancit Pusit or Pancit Choca or Pancit Choco en Su Tinta, Cavite City’s signature black noodle dish, stands as a delicious reminder of Caviteño creativity and resourcefulness. Originally made from adobong pusit leftovers, Caviteños found a way to stretch the dish to feed more members of the family by mixing it with bihon (rice noodles) with either sliced kamias or ginadgad na manggang hilaw as paasim.
