Arroz ala Cubana

Arroz a la Cubana is a popular dish in Spain. The Spanish version is made-up of white rice, fried egg, and tomato sauce. 

Ingredients:
1 lb ground beef
½ cup raisins
1 cup frozen green peas
1 medium yellow onion, minced
1 teaspoon minced garlic
1 medium potato, diced(optional)
1 medium carrot, diced (optional)
3 tablespoons tomato paste
1 tablespoon light soy sauce
3 tablespoons Worcestershire sauce
fried saba banana
fried eggs
steamed rice
Salt and ground black pepper to taste

Procedure:
In a large cooking pan, sauté the onion and garlic.
Put-in the ground beef and cook for 5 to 7 minutes.
Pour-in tomato paste, worcestershire sauce, soy sauce, raisins, potatoes and carrots. Stir and then cover the pan. Simmer for 10 to 12 minutes or until the liquid evaporates.
Remove the cover and then put-in the green peas. Cook for 5 to 8 minutes in low to medium heat.
Arrange in individual plates with steamed rice, fried bananas, and fried egg.
Serve !

Note: I use brown rice

Ube Banana Langka Rolls in Mango Flavored Condensed Milk topped with Crumbled Banana Chips


Ingredients:
2 saba , mashed
spring roll wrappers
ripe jackfruit (langka) cut into thin strips
ube halaya
cooking oil enough for deep frying
mango flavored condensed milk
crushed banana ships

Procedure:
Place about 3 tbsp mashed banana, few pieces of langka,  1 tbsp halayang ube in the spring roll wrapper.
Wrap and roll into shape of an egg roll.
Heat the cooking oil in a pan.
Fry the banana roll in medium heat until the color turns golden brown.
Remove from pan and put in a strainer to drain the oil.
Place in a serving plate.
Poured just enough mango flavored condensed milk.
Serve and Enjoy!

Banana Loaf

A very basic recipe for delicious banana bread


Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Mashed Banana Fritter




Ingredients:
3 ripe bananas, mashed
½ cup all-purpose flour
1 tsp baking powder
1 large egg
¼ cup water

Procedure:
Combine all-purpose flour, baking powder, egg, and water in a large bowl. Mix till a smooth batter forms. Stir in mashed bananas. Cover and set aside for 15 minutes.
In a medium sized sauce pan, heat about 1 inch deep oil. Gently lower a ladleful batter into hot oil. Fry until golden brown, turning once. It only takes about 2 to 3 minutes. Two or three pieces may be fried at the same time but do not overcrowd pan.

Remove and place on paper towel. Serve immediately.
