This is one of the popular Filipino cake merienda that can also be found sold even in nearby bakeries. This recipe the second banana cake recipe feature in this blog.
Ingredients:
125g butter, softened
3/4 cup caster sugar or brown sugar
2 eggs
1 cup mashed banana
1 tsp vanilla essence
1 tsp baking soda
2 Tbsp milk
13/4 cup all purpose flour
1 tsp baking powder
Procedure:
Pre-heat oven to 350°. Line pan with wax paper.
Beat butter and sugar until light and fluffy.
Beat in eggs one at a time. Stir in bananas and vanilla essence until combined.
Mix baking soda and milk together before stirring into the banana mixture. Sift in flour and baking powder, fold into the mixture until combined.
Spoon mixture into prepared tin and smooth the top. Bake for 40-45 minutes until cooked (insert a clean skewer, if it comes out clean it is cooked). Stand for 5-10 mins before inverting onto a wire rack to cool.
