Sweet and Spicy Dilis

Sweet and Spicy Dilis is a dish that is made out of dried anchovies in a sweet and spicy coating


Ingredients:
2 cups dried anchovies (dilis)
4 tbsp ketchup
1 tsp cayenne pepper
1/3 cup brown sugar
2 cloves garlic, minced
cooking oil

Procedure:
Add oil in a pan and cook dried anchovies in medium heat for 1-2 minutes, do not overcook otherwise it will taste bitter. Remove from wok, drain then set aside.

Place cooked anchovies in a bowl then add ketchup, sugar and cayenne pepper. Mix well and make sure anchovies are well coated. In a wok add oil then sauté garlic, add the anchovies and cook in low heat while continuously mixing until sugar melts. Remove from wok, keep it cool then serve.

Cavite City Library and Museum

A city library holds significant importance as a hub of knowledge, learning, and community engagement. It serves as a vital resource for individuals of all ages, providing free access to a wide range of books, educational materials, and resources. The library promotes literacy, supports academic pursuits, and fosters a love for reading and lifelong learning. Moreover, it serves as a space for community engagement, offering diverse programs and activities that bring people together, encourage cultural exchange, and create a sense of belonging. The city library plays a crucial role in fostering intellectual growth, promoting education, and strengthening the social fabric of the community.

Cavite City Library has an exhibition of photographs of Cavite City's heroes like the Xlll Martyrs, Julian Felipe, Ladislao Diwa and other prominent Caviteños. Other on display I saw are exhibits of old photographs, memorabilia, relics of old furniture and household objects provide a glimpse of Cavite City up to the American occupation.



But it was a dismay visiting our city library. The books and first floor area are all full of alikabok like it has not been cleaned for ages. The catalogue is very rusty and dusty and has not been updated for ages too. Makes me wonder if a librarian really manages it?

Lechon Paksiw

Lechon Paksiw is a traditional Filipino way of cooking left-over lechon is to recycle it into this yummy dish. Happy Fiesta con todo !


Ingredients:
left-over lechon
1/2 cup vinegar
1 cup water
2 cups lechon sauce or bottled Sarsa ni Mang Thomas
1/4 cup soy sauce
1/2 cup brown sugar or more (if you like it sweeter)
1 small head garlic, minced
salt and pepper

Procedure:

Chop lechon into small serving pieces. Add to a wok together with all the other ingredients. Bring to a boil. Lower heat and simmer until lechon skin becomes very soft and sauce thickens. Served with rice.

Priced at P7 per plastic pack it contains around 3 tablespoon of tamales. It lacks peanut flavor but for its cheap price pwede na rin.
