Paksiw na Bisugo

Paksiw na Bisugo is one of the many variety of fish paksiw simmered in a vinegar-garlic mixture.

1 kilo bisugo, cleaned
1/2 head garlic, crushed
1 thumb size ginger cut into thin slices
1 medium size onion, quartered
1/4 cup vinegar
cooking oil
salt and pepper to taste

In a casserole place garlic and ginger at the bottom. Arrange fish, add a cup of water and vinegar . Put on  Season with salt, pepper and drizzle with cooking oil. Cover and simmer until fish is cooked. Serve.

Best paired with : chicharon
