Aling Ika's Bibingkoy

Bibingkoy is one of the most famous Caviteñean kakanin aside from the Samala rice cakes. It's like a combination of tikoy, buchi and ginataan.


Made of glutinous rice stuffed with boiled sweetened monggo but instead of fried like buchi it is baked in an old style pugon oven then topped with coconut cream sauce with sago(tapioca) langka(jackfruit) and kaong(sugar palms) although the last two had been omitted over the years to cut cost.

Only one name comes to mind when we hear bibingkoy - Aling Ika's Carinderia in Cavite City Public Market. Her bibingkoy is famous way back before the Japanese occupation and war era. Good thing Aling Ika’s children had taken over to continue the bibingkoy legacy so up to now Caviteños can still savor and enjoy this kakanin at the public market. According to my mom my great great grandmother used to make this too.

Another fave of mine and most children from Aling Ika is this ube kalamay which is also serve with coconut cream sauce like in bibingkoy.

  1. oh i miss aling ika's bibingkoy! its so nice to find a fellow cavitena like me :) i was googling pancit puso recipe and i saw ur site! i was so happy! i really miss pancit puso i used to buy it from an old lady na naglalako sa likod ng baste hehehe for 10 pesos per plastic. hope you post more in ur site

    Todo cumida alli na Cavite muy sabroso. Numero uno Nyora Ika Y Nyora Badang.
    Antes tiene tienda de lumpia fresca Y pancit alla na Cabuco cerca P.Burgos.

    1. Too bad I was too young to taste the lumpia fresca and pancit but I'm sure my mom and her cousins enjoyed it in their younger years :)

  5. So nice to have a blog like this. I have been searching for bibingkoy recipe ( the procedures on how to do it well ). is it possible to get a copy of the recipe? Any means that I could buy or get one. Thanks a lot . . .

    1. I think there is a special oven to cook bibingkoy shown when this was featured in a local travel and food show but of course Aling Ika's children didn't share the recipe. Just a glance how it is made.

  6. I love this dessert/merienda. When we moved to Olongapo, there was a similar item on sale at the Bajac Bajac market but it was made by a lady from Bataan. There was also a version sold at Dinalupihan, Bataan Public Market.

    Ta culda yo cuando niso ta quida na calle Lopez Jaena, San Roque, Ciudad de Cavite tieni ung mujer ta haci tienda mirienda todo a la tarde el nombri Ñora Fidela. Sabroso el pancit de carajay y otro otro clasi di mirienda.

    1. Yo rin ta culda kun Nora Fidela. Mucha ora ta pasa a la tarde todo niso ta huga alagua despues compra merienda kunele. Kada tardes el cariton de ella ta pasa encasa na Lopez Jaena. Todo niso ta cumpra pansit, ginataan y tokwa baboy. No ayma tiene sabi kilaya ella ta kusi muy sabroso kakanin Caviteno. Vivian Baldoria (nee Reyes)

  9. cuando yo joven pa yo favorito el bibingkoy porque yo no sabi dondi mi tia ne ta cumpra ese. aquel tamales ta cusi siempre tiene na manteka o tana oja del platano.yo muy gusta comer ese i tiene pa jamon china na pan de sal o pan americano i na caliente cafe.. .antes mi tia ne cada pascua i ano nuevo numa ta cumpra es muy sabroso. ador borja ' cavite boy'
