Tuna Mushroom Omelette
Ingredients:
1/4 teaspoon salt
1/4 teaspoon ground black pepper
5 eggs, beaten
2 tablespoons oil
1 medium red onion, sliced
1 can mushrooms, sliced
1 cup cooked rice (optional)
2 (5 oz.) cans tuna, drained
Procedure:
Heat a frying pan or skillet on a stove top. Pour-in the cooking oil.
Once the oil becomes hot, saute the onion and mushrooms for 2 to 3 minutes.
Add the tuna. Cook for 2 minutes. Add rice.
Fry beaten eggs. Cook in low to medium heat for 4 to 6 minutes or until eggs are set.
Wrap the filling with egg. Share and enjoy!

Sarciadong Itlog
Typical sarciado is made of fish but at home my mom usually turned hard boiled egg into sarciado. And here is my attempt to replicate her version.

Ingredients:
hard boiled eggs, sliced into half
tomato, chopped
garlic, minced
white onion, chopped
fish sauce
cooking oil
water
salt and pepper to taste
Procedure:
Saute onion, garlic and tomatoes. Add water, and season with fish sauce. Simmer to boil. Salt and pepper to taste. Pour the sauce over the top of sliced boiled eggs. Let sit for few minutes. Serve with steamed rice.
