Cavite City, known for its rich history and vibrant culture, is also a haven for food lovers. Among its many culinary treasures, pancit holds a special place, offering a delightful glimpse into the city's diverse influences and heritage.

The pancit culture in Cavite City beautifully blends timeless recipes with innovative twists. The iconic pancit puso, featuring noodles paired with tangy pickled banana blossoms, stands as a proud representation of local flavors. Equally loved are classics like chami, with its thick noodles and sweet-savory sauce, and pancit bihon tostado, a perfectly toasted noodle dish adored through generations.
As a coastal city, Cavite infuses its pancit dishes with distinct seafood flavors. Kakanin - Cavite City Sellers

Kakanin of Native Delicacies hold a significant place in Filipino culinary traditions. Uniquely Filipino, these sweet treats often serve as snacks or desserts, crafted from rice, glutinous rice, or root vegetables that undergo slow cooking and are commonly infused with coconut or coconut milk.

The top favorites in Cavite City are Bibingkoy and Bibingka Samala. Additionally, there are other homegrown vendors offering a wide variety of choices, sold from individual servings to larger bilao portions.

Pancit Puso - Cavite City Sellers

Pancit puso has its origins in the Galleon trade era, a time when Cavite engaged in significant trade with Chinese and Mexican immigrants.

Today, it can be easily found in public markets to daily merienda vendors and small food shops selling it on huge bilaos. This dish features two types of noodles - bihon and miki in achuete. It is typically adorned with vegetables like carrots, cabbage, green beans, chayote, pork, shrimp, and chopped chicharrón. It is accompanied by pickled palm heart, which imparts a tangy flavor, balancing out the richness of the dish.

In the past, calamansi was costly, leading to the use of pickled palm heart (puso) as an alternative, which eventually gave the dish its name.

Pancit Pusit / Pancit Choco En Su Tinta - Cavite City Sellers

 


Pancit pusit or pancit choco en su tinta literally means “noodle with squid in its own ink”. The recipe originated from the necessity of Caviteño fishermen who had to prepare freshly caught squids with noodles to be able to extend it and have enough food for the whole family.
The customary garnishes include freshly chopped kinchay, fried garlic, and sliced kamias or ginadgad na mangga for a touch of acidity. These vibrant toppings not only elevate the dish's visual appeal but also introduce a delightful burst of flavors. The sliced kamias or ginadgad na hilaw na mangga provides a tangy counterpoint to the pancit pusit's rich flavors, while crushed chicharón serves as an optional topping.

Salakot

You are not a legit Caviteño if you do not know this city bread? 


Quesillo will not be perfect if not paired with salakot bread.


Salakot is a soft bread you can find in Dizon's Bakery in Cavite City, which has been churning out pugon-baked breads since the 1930s. 


Ever wondered why it’s named “Salakot”? 
It’s because it resembles the traditional hat used here in the Philippines! 

Dizon's old pugon made the difference between artisanal and mass produced breads.

This small meryendahan was established in 1990 as a typical meryendahan sa kanto with kaldero and little mesa. A few years ago it was expanded to a mini eatery still serving but this time almost 40 types of meryenda.

This is the only cheapest seller of meryenda daily except Sundays with almost all variety in the entire city. Taste is okay for its price but do not expect super sarap but nakakabusog sa halagang twenty pesos. Imagine P20 sa panahong ito. Be sure to visit them as early as twelve noon since the servings is only until supplies last. Usually they ran out as early as 4 pm during peak days.  



They also accept orders by bilao. If you have events and parties you can check their FB page, call and pick it up your order.
