Lechon Paksiw

Lechon Paksiw is a traditional Filipino way of cooking left-over lechon is to recycle it into this yummy dish. Happy Fiesta con todo !


Ingredients:
left-over lechon
1/2 cup vinegar
1 cup water
2 cups lechon sauce or bottled Sarsa ni Mang Thomas
1/4 cup soy sauce
1/2 cup brown sugar or more (if you like it sweeter)
1 small head garlic, minced
salt and pepper

Procedure:

Chop lechon into small serving pieces. Add to a wok together with all the other ingredients. Bring to a boil. Lower heat and simmer until lechon skin becomes very soft and sauce thickens. Served with rice.
