Cardillo

Another Caviteñean way of recycling leftover fried fish.




Cardillo o Cardillong Isda is Caviteñean way of cooking fried fish in water with onions, tomatoes and beaten egg. 

Ingredients:
leftover fried fish whole or sliced
2 cloves garlic, crushed
1/4 cup sliced onion
3/4 cup diced ripe tomato
1/2 cup water
2 eggs, slightly beaten
oil for sauteeing
salt and pepper to taste

Procedure:
Saute garlic until brown; add onion and tomato. Cook until onion is transparent and tomato is soft. Add fried fish and water. Simmer for 5 minutes. Season with salt and pepper. Add slightly beaten eggs. Simmer for another 2 minutes.

Serve hot.
