Afritada

Afritada is one of those tomato sauce based stews that was introduced in the Philippines by the Spaniards. This is usually made of chicken although some uses pork.


Ingredients:
1/2 kilo chicken, in serving pieces
3 cloves garlic, minced
1/4 cup red onions, chopped
1 can tomato sauce
1 bay leaf
1/4 cup water
3 medium potatoes, cubed
1 small carrots, cubed (optional)
1 small canned green peas, drained
1 red or green bell pepper, sliced
3 tablespoons of cooking oil
salt and pepper to taste

Procedure:
In a cooking wok, heat oil. Sauté garlic and onions. Add chicken and slightly brown. Pour the tomato sauce and stock. Bring to a boil and allow to simmer until the chicken is almost cooked. Add cubed potatoes and carrots. Continue to cook until vegetables are tender. Add bellpeppers and green peas stir. Salt and pepper to taste.
