Escabecheng Isda


Escabecheng Isda is a way to recycle leftover fried fish and turn it into a new yummy dish the next day. This is the Caviteñean style escabeche is best paired with ginisang monggo. Yes you heard it right Ginisang Monggo. In Caviteñean food, there is such thing as food pairing and in the coming post I will try share more food pairings or food terno.

Ingredients:
leftover fried fish
minced garlic
1 medium onion(sliced)
vinegar
ginger
kasubha(safron)
sugar
water
cornstarch
salt

Procedure:
Combine vinegar, sugar, water, salt, and cornflour in a bowl, set aside. Saute the garlic and onion in a separate wok or saucepan until onion is translucent and soft.Add ginger. Stir and cook for about 3 minutes. Stir in the vinegar mixture and bring to boil. Cook for another minute. Remove from heat and pour on top of the fried fish. Serve warm.


Best Paired with: Ginisang Monggo
