Agre Dulce

Agre Dulce but pronounced in Chabacano as Agri Dulci means sweet and sour is how we call sweet and sour dishes.


This is one of our staple dish cooked at home and serve in city restaurants. This is the fish version but meatballs are equally popular.

Ingredients:
fried fish(lapu-lapu, tilapia or any breaded white fish chunks)
carrots, sliced
bell peppers, sliced
onions, sliced
cucumber, sliced
onion leeks(optional)
1 tsp cooking oil
sesame oil(for added flavor)

For the sauce:
3 tbsp of vinegar
6 tbsp of brown sugar
1 tsp. of salt
1/2 tsp of chili sauce
1 tbsp of tomato paste
1 tbsp of cornstarch
1 cup of water

Procedure:
In a small saucepan, mix together all ingredients for the sweet-sour sauce. Set over medium-high heat until thick and the cloudiness has disappeared. In another saucepan, heat 1 tsp. of oil. Add carrots and cucumber. Stir for a minute. Add bell pepper and onion. Stir for 15 seconds. Pour in the sweet-sour and bring to a boil. Remove from heat. Add a few drops of sesame seed oil. Pour over fried fish. Serve at once.
