Nilagang Talong at Bagoong

A very easy to make side dish that for some ulam na.


Ingredients:
medium size eggplants
cooked bagoong alamang

Procedure:
Slice eggplants into half. Boil until cook but make sure its not mushy. Spread bagoong on top.

Guinatan Halo-Halo

Ginataan or Ginataang Halo-Halo, a favorite Filipino merienda made from boiled coconut milk with a mix of bananas, sweet potatoes, taro root, tapioca pearls and glutinous rice balls.


Ingredients:
    3 cup coconut milk
    4 cups water
    2 cups sweet potatoes, cubed
    2 cups Saba banana, cubed
    2 cups taro root or Gabi), cubed
    1/2 cup tapioca pearls or mini sago, cooked
    1 cup sugar
 

For Bilo-Bilo:
    4 cups glutinous flour
    1 3/4 cups water


Procedure:
Make the bilo-bilo by mixing rice flour with water. Roll in 1/2 inch balls.
Mix the coconut milk, water, sugar and bilo-bilo in a pot and bring to a boil. Lower heat and simmer for 10 minutes, making sure the balls don't stick together. Add the sweet potatoes, taro root and cook for another 5 minutes. Add the bananas and tapioca pearls. Cook for until the sweet potatoes and taro root are soft but not mushy. Serve hot.

Inihaw na Liempo

Inihaw na Liempo is known as Grilled Pork Belly. This recipe is more on the sweeter side using banana ketchup thus the red color.


Ingredients:
1 kilo pork liempo, sliced
vinegar
soy sauce
garlic cloves
banana ketchup
ground pepper
salt
cooking oil

Procedure:
Marinade pork into a mixture of vinegar, soy sauce, garlic and ground black pepper. Drain off liquid and mix with ketchup and a little cooking oil. Grill pork slices while basting with sauce just before being fully cooked. Serve with ketchup or dipping sauce made of soy sauce, calamansi and sili.

Ginisang Pechay

Ginisang Pechay is a healthy with vegetable dish of chopped pechay with ground pork.


Ingredients:
1/4 kilo ground pork
bundles of pechay, washed and chopped
4 cloves garlic, minced
1 small sized tomatoes, chopped
1 cup chicken or pork stock
1 tbsp fish sauce
1 tbsp oyster sauce 
3 tbsp oil
salt and pepper

Procedure:
In a pan over medium heat, saute garlic in oil until light brown. Add tomatoes and saute. Add ground pork. Saute until juice starts to come out. Add stock and fish sauce. Bring to a boil. Cover and simmer for about 5 minutes or until pork is tender. Season with salt and pepper. Add pechay and oyster sauce. Simmer for a few more minutes.Serve.

Dra. Olivia Salamanca


1889-1913

Olivia Simeona Demetria Salamanca y Diaz was the second child of a well-to-do couple, jose Salamanca, a colonel in the Philippine Revolutionary Forces, a pharmacist, and a signer of the Malolos Constitution, and Cresencia Diaz. Olivia was born on July 1,1889 in San Roque, Cavite where she spent her childhood.

She obtained her early education is a private school in Cebu where her father worked as a pharmacist. When the family returned to Cavite, Olivia studied in the Colegio de la Sagrada Familia in Cavite City and later at the Cavite High School where she completed the first two years of the secondary course.

When an examination for scholarship to the US was given in 1905, Olivia took it and was one of the two women awarded a grant. She enrolled in a high school in St.Paul, Minnesota and finished the secondary course at the Drexel Institute in Philadelphia. Although her original plan was to take up teaching, she shifted to medicine and was admitted to the Women's Medical College in Philadelphia in 1906.

During her second year in college she won a prize in anatomy. Being brilliant she finished the medical course in four years, obtaining grades that were above 90 percent. In 1910 she took and passed the civil service examination in the US. she also visited medical centers in New York and Washington D.C., BAltimore, New York City, Rhode Island, and Boston.
It was on July 24,1910, when Dr. Salamanca returned to the Philippines after a whole month's voyage. Upon her arrival she was appointed secretary of the Anti-Tuberculosis Society. She was so engrossed with her work that she became neglectful of her own health. She became a victim of white plague that she was sent to the Baguio Hospital to recuperate. She continued working in this hospital while undergoing treatment. when her condition did not improve, she was sent to Hongkong for treatment by the Lopez family of Batangas. however, her stay in Hongkong did not improve her health. She returned to Philippines and on July 13, 1913, she died at the age of 24.

As a tribute to this exemplary woman, a historical marker was installed by the Philippines Women's Medical Association at the Plaza Olivia Salamanca. A street in San Roque, Cavite and a ward in the Mary Johnston Hospital in Tondo, Manila, have been named after her.
