Bistik

Bistik is a quick popular Filipino dish made with beef strips marinated in soy sauce and calamansi, fried until tender then topped with onions.




Ingredients:
2 pounds sirloin steak, cut into 1/4-inch pieces( Monterey brand is the best)
2 tbs calamansi juice
3 tbs soy sauce
1/2 tsp ground pepper
salt to taste
1 cup thinly sliced onion rings (white or red)
1/4 cup cooking oil
1/2 cup water

Procedure:
Marinate the meat in calamansi juice, soy sauce, pepper and salt for 3 hours or more.
Cook onion rings in oil until transparent. Transfer to a serving dish, leaving the oil in the skillet.
Add the meat to the skillet and cook over high heat, stirring often, until tender. Transfer the meat to a serving dish.
Add marinade and water to the skillet, simmer for 10 minutes and pour over the meat and onion rings.

Grilled Gindara



Ingredients:
1/2 kilo Gindara
salt and pepper
oil
5 tablespoon of butter, softened
1 small head of garlic minced


Procedure:
Season fish fillets with salt and pepper. Preheat griller and brush it with a little oil. Mixed garlic and butter until it turns into a paste. Place fish fillets on the griller and brush it occasionally with butter until cooked. Serve.

My version of the delicious sweet snack and dessert sosyal style.



Ingredients:
bananas (saba), cut eadh piece into six
jackfruit (seed removed and sliced thinly lengthwise)
lumpia wrappers
oil
butterscotch sauce
sesame seeds

Procedure:
Wrap a banana and jackfruit in the lumpia wrapper.
Fry for until golden brown.
Drizzle with butterscotch sauce and sprinkle with sesame seeds.
You can also top it with vanilla ice cream to make it Turon Ala Mode.

Buko Pandan

Aside from fruit salad this is one of the popular Filipino easy and refreshing dessert using buko strips.



Ingredients:
pandan leaves
water
1 box ALSA gelatin (green)
1 kilo buko strips
1 tetrabrick All Purpose Cream(chilled)
1 small can condesed milk
1 cup small sago
1 bottle kaong(optional)

Procedure:
Boil water together with pandan leaves that are individually twisted to break the fibers and expose the juice. Simmer for 20 minutes.
Cooked gelatin using pandan water according to package direction. Cool until set and sliced into cubes.
In a large bowl, whisk together all-purpose cream and sweetened condensed milk. Drain off all the liquid from the buko meat then add to the cream mixture. Add sago, kaong and gelatin. Mix. Serve chilled.

Bopis

Bopis is an original Filipino dish made with combination of pork heart, lungs and liver. This dish is also commonly sold in turo-turo eateries.

Ingredients:
1/2 kilo pork heart
1/2 kilo pork lung
1 whole garlic, miced
1 large onion, diced
2 medium size labanos, sliced into strips
1/2 cup vinegar
atsuete oil
black pepper
oil
patis for taste
siling labuyo (hot pepper) (optional)

Procedure:
Boil pork heart and lungs in low to medium heat for an hour or until tender. Dice pork heart and lungs. Sauté garlic and onion in a large pan. Add in diced bopis and stir until it starts to sizzle. Pour in vinegar and let simmer for 10 minutes(do not stir). Lower heat and add in annatto oil, patis and black pepper, stir cook for another 2-3 minutes. Add some water, labanos and siling labuyo. Simmer for a few more minutes or until most of the liquid has evaporated. Adjust taste.
